The Rise and Rise of Fred's Bushtucker - Local Illawarra Business

Freds Bush tucker has grown extensively over the past three years, and all of this is due to the hard work and determination to fulfil a vision to encourage the acceptance of quality, authentic, Australian Indigenous bush foods and culture. Fred is proud to have cooked for many thousands of people they have met at both community functions, National Celebrations held with Councils and Government and the wider Illawarra and Sydney Communities, including Local, State and Federal Members.

Fred said they are committed to providing a sustainable product that promotes a healthy lifestyle as well as encouraging all to have "Just a Taste" of what indigenous food has to offer.
Fred and Elizabeth are very proud that the National Heart Foundation of Australia have produced a fantastic cookbook of recipes from the Aboriginal and Torres Strait Islander people of the Illawarra and South Coast and Fred's Bush Tucker has two of our recipes included. Fred and Elizabeth incorporate the fantastic flavours of native herbs and spices into their range of Indigenous inspired catering options. For instance you can try crocodile marinated in wild lime and chilli gingeror Kakadu plum kangaroo tartlets, lemon myrtle cheese cakes for afternoon tea and finish with a refreshing lilli pilli cordial.
They have developed some suggested catering packages which you can download from the menu page on the website and they are able to be flexible and mix and match packages to create an individually tailored menu to suit customer needs and budget.

Fred is also available to give traditional bush tucker cooking demonstrations, where, for example, groups can have a hands-on experience preparing fish wrapped in paperbark and cooked on hot coals.

ITeC has a strong history of community based projects spanning over the life of the organisation

With a focus and a commitment on community, ITeC has been instrumental in offering support services, including training, to people from a range of backgrounds including Indigenous Australians, youth at risk and people from culturally and linguistically diverse backgrounds.

ITeC continues to provide services to the local communities through regeneration programs, community building and a suite of training services offered in partnership with several Government Departments.
